Camp's Pickles recept

Eten wij graag pickles? Uiteraard! En liefst gecombineerd met een traditioneel stukje charcuterie. Neem nu een stukje kipkap, hoofdvlees of zelf een stukje paté.
Maar pickles is veelzijdiger dan dat. Zijn zuur/zoete pittige smaak laat zich met veel combineren.
En laat nu net Pickles van Camp's een wedstrijdje hebben uitgeschreven waarin ze op zoek gaan naar de beste pickles recepten.

Ik moet eerlijk zijn, ik kende  Camp's niet maar na hun pickles geproefd te hebben behoort deze zeker tot een van mijn favorieten. Lekker zuur op het scherpe af met royale stukjes krokante groenten en stevig genoeg van structuur! Heel lekker!!

Hieronder mijn recept met de pickles van Camp's. Inspiratie vond ik bij de klassieke zuurkool waar gewoonlijk een stukje Kasseler bij is, een lekker gesmoord en gerookt stukje varken  en bij de meer exotische curry.

Kasseler/bloemkool/witte kool/pickles

ingredienten voor 2:


  • 400 gr. Kasseler vlees, geportioneerd in mooie schijfjes. Zorg voor 2 stukken per persoon, 1 om 'natuur' te grillen en 1 om te lakken.
  • 1/2 halve witte kool in fijne lamellen gesneden
    • 2 kruidnagel
    • 2 jeneverbessen
    • enkele zwarte peperbolletjes
    • enkele korianderbolletjes
    • een snuifje muskaatnoot
    • een snuifje kaneel
    • een glas witte wijn, +/- 25cl
  • 1 kleine bloemkool in kleine roosjes gesneden
    • 3-4 Tl cuurypoeder
  • Laksaus
    • 200ml kalfsfond
    • 2 teentjes look, gesnipperd
    • 1 stengel citroengras, gehalveerd en geplet
    • 1/2 Tl 5-kruidenpoeder
    • 1 El honing
    • 50 ml soyasaus
    • 3 Tl bruine suiker
    • 5 fijne schijfjes verse gember
  • Crème van pickles(meer dan genoeg voor dit recept, had nog nodig voor een ander gerecht dus je mag de hoeveelheid vloeistof gerust halveren!)
    • 250gr. pickles saus van Camp
    • 200ml room
    • 500ml kippenbouillon
    • 2 tenen look, gekuist maar in zijn geheel
    • 100 gr boter
    • Xantanagom of een ander dikkingsmiddel
  • 2 lenteuien
Begin met de laksaus.Doe alle ingrediënten in een pan en laat ongeveer 30 minuten inkoken tot je een lichte siroop krijgt. Zet opzij.

Begin vervolgens aan de crème van pickles. Kook de room, de lookteentjes en de kippenbouillon in tot 1/3de, voeg de pickles toe samen met de boter en laat nog een tiental minuten doorkoken. Mix dit geheel fijn, passeer door een zeef en dik in met het dikkingsmiddel. Zet opzij.

Smelt een nootje boter in een pan, voeg de witte kool toe en laat even meebakken. Overgiet met het glas witte wijn, voeg de peper, koriander en kruidnagel toe. Rasp de muskaatnoot en kaneel erover en laat gaar koken voor +/- 8 à 10 minuten. 

Blancheer de bloemkoolroosjes kort in gezouten water, +/- 4 minuten of beetgaar en verfris in koud water. Verhit een pan met arachideolie op een hoog vuur en voeg het currypoeder toe wanneer heel heet. Laat even meebakken en voeg dan de bloemkoolroosjes toe. Laat deze kort bruinen.

Smelt een nootje boter in een pan en bruin de lenteui hierin kort.

Verhit een grillpan op een hoog vuur en voeg de stukjes Kasseler toe. Quadrileer 2 stukjes en strijk de andere stukjes in met de laksaus. Laat deze rustig karameliseren, keer om en strijk opnieuw in. Tel ongeveer een drie- a viertal minuutjes per kant.

Stel je bord samen.




Veeg een streep van de pickels crème over de breedte/lengte van je bord. Plaats een portie witte kool aan een kant van het bord en plaats hiernaast een stukje gegrilde Kasseler en een stukje gelakte Kasseler. Leg naast de Kasseler een portie curry bloemkoolroosjes. Werk af met een toefje verse pickles  van Camp's  en wat gebrande lenteui.

Pikant rundvlees in de wok met Quinoa

Een gerechtje dat eens de voorbereiding achter de rug is 'in no time' op tafel staat.
Volgens mijn bereiding is het aangenaam pikant maar wat ik aangenaam vind kan een ander als 'volcano'  beschouwen dus kruiden naar smaak ;).



Nodig voor 4 personen:


  • +/- 600gr. rundvlees. niets te duur, malse gepelde steak/bavette bvb
  • 1 rode paprika, in stukjes gesneden
  • 2 wortels in ronde fijne schijfjes
  • een paar handenvol spinazie, +/- 300gr.
  • 1 grote ui, in fijne schijfjes
  • 1 teentje look, gesnipperd
  • 1 chili peper, gesnipperd en van zaad en zaadlijsten ontdaan
  • 2 tomaten, in blokjes
  • 1 el vissaus
  • 2 el sojasaus
  • 2 tl sesamolie
  • 1 tl currypoeder
  • 1 snuifje cayennepeper
  • peper
  • zout
  • 250ml kippenbouillon
  • 1/2 tl chilipoeder of vlokken
  • 1 el bruine suiker
  • 1 tl gember poeder
  • 4-5 el pindasaus
  • 240gr.quinoa


Snij het vlees in hapklare stukken en leg in een kom. Kruid met peper, zout, currypoeder, cayennepeper en overgiet met sojasaus,vissaus en sesamolie. Zet weg en laat +/- 20 min. marineren.

Doen intussen de quinoa in een pot met kokend water, per deel quino 2 delen water, en laat ongeveer 15 minuten koken. Giet af en hou opzij.

Verhit een wok op groot vuur met arachideolie en schroei het vlees rondom dicht. Eventueel in porties. Haal uit de wok en houd apart.

Wok de ajuin,look en chili peper kort en voeg de paprika en wortel toe. Laat kort garen, een minuutje of vier.

Zorg dat de kippenbouillon warm is. Voeg hier het gember poeder aan toe,de suiker, de chilli vlokken(of poeder) en een paar flinke el pindasaus (+/- 4-5) en laat nog even doowarmen.

Voeg het vlees terug toe samen met de quinoa en de tomatenblokjes en overgiet met de warme bouillon/pindasaus. Misschien heb je niet alles nodig, het moet geen soepje worden. Roer alles goed om.

Voeg nu nog de spinazieblaadjes toe en laat deze slinken in de warme wok.




Voor degenen die het nog niet heet genoeg vinden (ik bvb), hou je potje Sriracha saus bij de hand! ;)

Caprese - spring is there?!

Finally, first sunny day in spring.
 What better to celebrate this than with a light yet savoury salad? One of my favourites; a caprese salad.
Simplicity at its best but with the best of products. Well....apart from the tomatoes as these were Belgian/Dutch greenhouse products as I didn't have a better quality available.
Nothing that makes me long for the summer more than tomatoes. Usually we plan a trip to Italy in the summer and for me that means tomato time! Fresh,sweet tomatoes grown under the generous Italian sun and packed with firm tasty flesh - not like our water tomatoes over here!
So if you can, get good quality tomatoes like a decent Coeur de boeuf or a plum tomato.

Ingredients:


  •  about 4 ripe tomatoes
  • 3 balls of mozzarella di bufala
  • plenty of fresh basil leaves
  • some dried oregano
  • black pepper
  • salt
  • good olive oil

Cut the tomatoes in slices and do the same with the mozarella and put them in a layer on a plate. Put some leaves of basil in between and on top of the mozzarella and tomatoes. Grind some black pepper over it, sprinkle some salt and add a generous amount of oregano.
Drizzle with a good amount of decent olive oil.
Dig in and....

Pasta - Sausage/pancetta/tomatoes/fennel

A nice complete pasta dish. The fresh taste of fennel, the fatty from the sausages and the salty from the pancetta all together with the herbs combine perfectly. And ready in no time!!

Ingredients for 4 persons :

  • 1 whole fennel, chopped roughly into fine parts
  • 5-6 chipolata sausages ( small sausages, try to find the ones that have plenty of herbs), chop them in small bits
  • 100gr. of pancetta
  • 1 chopped onion
  • 1 finely chopped garlic clove
  • 1 can of diced tomatoes
  • 1 small can of tomatoe puree
  • a handfull of cherry tomatoes, chopped in half
  • a handfull of chopped fresh sage
  • a tbsp.of dried oregano
  • some olive oil
  • a splash of  balsamic vinegar
  • Parmesan cheese, grated
Heat up some olive oil in a large pan, add the chopped panceta and let it bake slightly crispy. Then add the sausages and let them brown firmly on all sides.

Take the pancetta and sausages out of the pan,keep aside-add some more olive oil if needed- and add the onions and garlic and fry them for a minute or 2.

Throw in the chopped fennel with the chopped sage, let it feel the heat for 2 minutes, add the cherry tomatoes and a splash of balsamic vinegar and  let it cook out while you scrape the bottom of the pan.

Add the can of tomatoes together with the tomatoe puree and the oregano. Season with pepper and salt, bring to a slight boil and let it cook/reduce while you boil the pasta, +/- 8-10 minutes.

When the pasta is al dente you can add it to the sauce together with a few spoons of the pasta water.

Tear up some basil leaves, add it to the pan and stirr well.

Serve in a deep pasta dish with some grated parmesan on top and.....

Dulce de leche brownies

This is a  recipe I found on a belgian blog(in Dutch), Baked Louie's, made by a young baking enthusiast named Louie. This fella sure knows how to bake and he's only 16!
 A blog filled with delicious recipes for cakes, cookies and pies off all kind. A blog worth reading!

This recipe is packed with calories but sometimes you just have to ignore them and just indulge ;)

The recipe takes 2 steps; the dulce de leche and the brownies. Start with the dulce de leche.

Dulce de leche:

Ingredients:


  • 1 can of condensed milk, 305ml


Put the can, unopened, in a high cooking pot. Submerge in water and bring to a boil. 


Turn the fire lower when the water starts boiling vigorously and let it simmer for about 3 hours. Let the water cool down, take out the can, open it and pour the dulce de leche in a bowl and stirr untill you have a nice creamy texture. 





You can lick your spoon clean but don't be tempted to eat the whole bowl cause this is simply delicious.....




Brownies:

Ingredients:

  • Dulche de leche
  • 340gr. dark chocolate, chopped in bits
  • 230gr. unsalted butter
  • 50gr. unsweetened cacao powder
  • 280gr. pastry flour
  • 400gr granulated sugar
  • 100gr. pecan nuts, chopped
  • 6 eggs
Put some aluminium foil in a baking tin(+/- 20x30cm) and grease it up with some oil. 
Preheat the oven on 175°.
Melt the butter in a large pan, add the chocolate and let it melt in the butter. Then add the cacao powder and stirr well. Add the eggs, one by one and keep stirring. Add the sugar, let it melt in the mixture and then finish by adding the flour. Stirr well untill you get a thick mixture and add the chopped pecan's.
Pour half of this mixture in the baking tin and add about 4-5 spoons of dulce de leche, divided over the mixture. Swirl in the dulce de leche with a knife, creating a nice pattern and add in the rest of the mixture and repeat the step with the dulce de leche.








Put in the oven and bake for about 40 minutes.
Let it cool down, cut into pieces and serve! Delish!!!!

Bone marrow in the oven

Simple, basic but oh so yummilicious and nutricious(no need to use words like fat, cholesterol.....) and very satisfying when prepared correctly.


Ingredients:

  • 1 or 2 bones per person
  • Fresh thyme and rosemary
  • some oil
  • butter
  • Pepper and fleur de sel


Soak the bones in salted water for about 12 hours, draining and refreshing them +/- 2 times to remove excess blood. Clean them and dry them and put them on a oven plate greased with oil. Sprinkle some thyme and rosemary on them, some pepper and put a knob of butter on the bones.

Put them in a preheated oven(230°) for 20 minutes, take them out, dress on a plate, sprinkle some fleur de sel on the bones,take a small spoon and start spooning the rich,gooey inner center of the bones.Or just suck it out....(and burn your lips)

 Satisfaction guaranteed!!!!

And toss the bone at your dog if you have one.

Split pea soup - winter soup

It's that time again....Temperatures are dropping and getting closer to the freezing point, wind is getting harsher and rain seems to be here all day. Time to make split pea soup, a thick, hearty soup/meal that'll get the coming winter out of your head. This soup can be served as a meal with some bread, there's quite some meat in it.

Ingredients:

  • 500gr. split peas
  • 200gr. thick,smoked bacon. Cut in chunks
  • 1 cooked smoked sausage; +/- 250gr. Cut in rings
  • 1 small, smoked ham hock
  • 3 onions, chopped
  • 2 leeks, chopped in rings
Melt a big knob of butter in a large pan and fruit the onions. Clean the leeks under running water and add it to the onions. Let it fruit together with the onions for a minute or 2. Add the split peas. Normally you should let the peas soak in water overnight but I just add them to the soup and let all that simmer for about 2 hours, comes out nicely.
Submerge completely, ham hock also



When you've added the peas to the pan you put as much water in the pan untill all is submerged. Put in the ham hock and the bacon, bring to a boil and let it simmer for 2 hours.







Take out the ham hock and most of the bacon, not easy but you don't need to get it all out, leave some in the pan. Mix the soup untill you get a thick silky soup. Taste and season with pepper and salt.
Cut up the ham hock in bitesize pieces and add to the soup again together with the bacon. I usually let this rest overnight to get an even more intense taste.
You'll notice that this will turn into a thick, puree-like soup after a night so you'll need to add hot water to make it more liquid. 







Add the sliced smoked sausages, let it warm up for another 8-10 minutes and serve with some golden croutons.
You'll be warmed up under a minute! ;)

Mussels in white wine sauce

Lovely mussels recipe and a typical Belgian/dutch way of serving them. Good quality seafood, some vegetables, seasoning and a splash of wine....that's all it takes!!
This is a dish for 2 persons, so about 1.5kg per head. We're big mussels eaters but you can count about 1kg. per person normally!

Estimated preparing time: 30 minutes

Ingredients: 
  • 3kg. of mussels
  • a big glass of dry white wine, +/- 20dl
  • 2 big onions, cut in rings
  • 3 celery stalks, chopped roughly
  • 2 carrots, chopped in thin rounds
  • 1/2 bush of flat parsley, chopped up
  • 2 chillis, chopped finely and deseeded
  • a pinch of dried chilli powder
  • salt and pepper
  • 6 spring onions, chopped roughly
  • handfull of cilantro, chopped finely   Keep this aside together with the spring onions

Prepare the mussels in 2 pots, so divide them in 1.5kg servings. Divide the greens and wine in 2 equal amounts.

heat up some olive oil in the pots and throw in the onions, carrots, celery, parsley and chillis.

Add the mussels, dried chilli powder and the white wine and turn up the heat. Put the lid on the pot and let this cook for 5-8 minutes, add the spring onions and cilantro and season with salt and pepper, shake well and serve!

Halloween pumpkin risotto

A nice rich and creamy pumpkin risotto to be served as an appetizer or as main dish. Ideal for cold fall weekend days ;)





Ingredients:


  • 600gr. of pumkin, cleaned and seedless and diced in small cubes(+/- 1cm)
  • 1,3lt of chicken stock
  • 300gr. or risotto rice - Arborio or carnaroli
  •  about 50gr. of grated parmesan cheese and some slices for decoration
  • a couple of sage leaves
  • 1 challot, finely chopped
  • a glass of white wine
  • couple knobs of butter
  • salt and black pepper
  • olive oil
Make sure the chicken stock is warm.
Heat up some olive oil in a pan and fry the diced pumpkin until soft. Keep about a third apart for later and put the rest in the blender.

 Blend until you get a fine pumpkin puree, add some water if necessary. Season this puree with black pepper and salt and keep aside.





Heat up a couple of drops of olive oil in a large pan and fruit the challots.
 Add the risotto rice and stir firmly. As soon as the rice starts to get translucent you add the glass of wine and just let the alcohol cook out, this won't take long.
 Then you start to add the stock, ladle by ladle. You add one ladle and when the risotto starts to get dry you add another one. This takes about 15mins to get the rice 'al dente'. Make sure to taste from time to time, you don't want this to be overcooked and mushy but not undercooked neither. The grain should be soft but still with some bite. Now add the grated parmesan and let it melt under the rice.

 Add the pumpkin puree and diced pumkin and stir well. 
Throw in some knobs of butter, taste and season with salt and black pepper to your liking.

Heat up some olive oil in a small pan and fry the sage leaves shortly.







Take a big ladle of risotto and plate it on a dish, decorate with slices of parmesan and some sage leaves.

Chocolate mascarpone cake

An easy Chocolate cake recipe, based on a creamy masacarpone and fresh cheese filling. The chocolate is flavoured with powdered ginger but you can also buy chocolate with ginger allready in it if you can find that!

Ingredients:

  • 250gr. mascarpone
  • 200gr. fresh cheese
  • 150gr. dark chocolate
  • 50gr.melted butter and some more for greasing the form
  • 150gr. JulesDestrooper butter waffels (or ginger bisquits or any type of hard cookie...)
  • 2 eggs
  • 35gr caster sugar
  • 1 tsp. powdered ginger
  • Springform of 20 Ø
Preheat your oven at 190°.
Break up the waffles in pieces and put them in the blender, pulse and grind to a fine crumble.

Mix the crumble with the melted butter  and spread this in the springform. Press well with the back of a spoon, certainly on the edges. Bake this in the oven for 5 minutes. Take it out and let it cool down and turn down your oven to 170°.










Mix the mascarpone with the fresh cheese to a smooth cream. Break the eggs and put them in the cheese/mascarpone cream together with the sugar.


Melt the chocolate 'au bain marie' and add the ginger to it.

Add the melted chocolate to the mascarpone/cheese mixture and pour it in the form. 
Put in the oven for 50-60 minutes. Take it out and go around the edges of the form with a thin knife to cut the the cake loose from the side of the form. Let the cake cool completely down in the form. 
Don't worry if the cake collapses a bit, that's normal.
