Clafoutis met mosselen, zalm en courgette

Blijkbaar laten alle goede dingen een tijdje op zich wachten dit jaar... Eerst waren het de maatjes die een flinke vertraging opliepen en nu ook de Zeeuwse mosselen die door het slechte voorseizoen enkele weken later waren.
Niet geklaagd echter,nu zijn ze er en hebben we volop tijd om er van te genieten.


Onderstaand receptje is een lekker hartige clafoutis. Genoeg als hoofdgerecht voor 2 geserveerd met een opgemaakte salade of als voorgerecht voor 4.

Ingredienten:


  • 1 courgette, in fijne plakjes/slierten gesneden
  • +/- 300gr. zalm, in duimdikke blokjes gesneden
  • +/- 600gr.mosselen
  • 4 eieren
  • 60gr. bloem
  • 25cl melk
  • 20cl room
  • 1 ui
  • 1 teentje look
  • 1 rode chilipeper
  • peper en zout
  • olijfolie
  • blokje parmezaanse kaas
Kuis de mosselen grondig.
Verhit olijfolie in een ruim kookpot en fruit de ui,look en chilipeper kort. Voeg de mosselen toe en laat kort meestoven tot de schelpen mooi open zijn en de mossel er makkelijk uit kan gehaald worden. Zet de uitgehaalde mosselen apart en ook enkele lepels van het smakelijke kookvocht. Dit laten we niet verloren gaan!

Meng de bloem en de eieren in een kom en voeg de melk, room en enkele flinke eetlepels van het kookvocht van de mosselen toe. Meng goed tot een dun beslag.


Vet een ovenschaal in(ik verdeelde dit over 2 medium schalen).
Doe peper en zout op de zalmblokjes en verdeel deze over de schaal. Schik de plakjes/slierten courgette ertussen en overgiet met het beslag. Schik de mosselen er bovenop en werk af met geraspte parmezaanse kaas.

Zet in een voorverwarmde oven van 180° en bak af in +/- 25 minuten. Het beslag moet vast zijn maar niet gortdroog gebakken, een beetje als een omelet.

Neem uit de oven en serveer,

Oesterput - Blankenberge

Een bezoekje aan zee is niet compleet zonder een portie vers 'seafood' en bij de Oesterput in Blankenberge kom je dan zeker aan je trekken.


Gesitueerd tussen de 'industrie' in de haven van Blankenberge verwacht je niet meteen een restaurant maar de versheid van de producten die je hier krijgt is mede te danken aan deze nabijheid van de zee.



Wat oorspronkelijk een handel was in zeevruchten is nu een restaurant dat over het hele land(en daarbuiten) bekend is om zijn zeevruchten en visbereidingen en nog steeds wordt uitgebaat door de familie Devriendt. De kreeften vliegen er bijna letterlijk rond je oren.

Canadese kreeften uitgezet in hun eigen bassins kan je er krijgen in verschillende bereidingen alsmede kraakverse oesters.


Een absolute aanrader, zeker om een mooi divers aanbod te krijgen, is de zeevruchtenschotel. Deze schotel, al dan niet met een halve kreeft, bevat wulken, kreukels, grijze garnalen, sint jacobsvruchten, scheermessen, langoustines, oesters, gamba's, scampi, krabbenklauwen en king crab poten.
Onze halve kreeft was gekookt in een flink gepeperde en licht pikante court-bouillon en geserveerd met de huisgemaakte coctail saus. Heerlijk!
De zeevruchtenschotel blijft schitterend in zijn eenvoud. Heerlijk verse 'goodies' uit de zee, meer moet dat niet zijn!


















En met een flesje bubbels, Moët & Chandon smaakt dit alles eens zo lekker.


Het restaurant zelf kan nogal aan de rumoerige kant zijn. Je zit er immers in het midden van een hangar met links van je het kreeftenbassin en rechts van je de open keuken vanwaar regelmatig met luide stem de kreet 'E Hopla' galmt om aan te kondigen dat er een schotel klaar staat.Luid ,ja maar op zich best amusant.


Eindigen doen we met een in huis gemaakt vanille ijs met verse aardbeien en een koffie.














 Geen culinaire hoogstandjes hier maar superverse zeevruchten.

Bia Mara - Fish 'n chips with a twist



Bia Mara is a recent fish 'n chips store in the heart of Brussels offering fish 'n chips with a 'twist'. You won't find the common known thick battered fish and greasy, once fried chips here but a tasty interpretation of this classic.
Fresh cut, well seasoned fish filets fried golden in a panko crust. Served with plump crispy fries and a sauce of your choice. You can choose between haddock, salmon, mackerel, prawns or the catch of the day and if fish is not your thing then go for the chicken or the veggies. Pick a sauce; tartare, garlic-truffle(highly recommended!!!),lemon cajun,.... and have your chips/fries dusted with a seasoned salt (sounds odd doesn't it?) of your liking.

I had the panko crust fried red gurnard filet with tartare and garlic-truffle sauce and the chips with seaweed salt and it was delicious.
The fish had a good crunch but was still moist on the inside and that garlic-truffle sauce was simply divine! The chips were really plump but nicely cooked, crispy out/fluffy in. A slice of lemon to get a tangy kick to the fish and that's it!! Yummylicious!

Interior design is simple, mostly grey with some accents. Tables in clear wood. Urban and hipster proof! The service is friendly and welcoming.

Shortly after my first visit I returned with my wife to find the store closed and was spoken to by the owner(I think) who said that they were closed due to problems with the delivery of fresh fish. Now that is something that makes my belief/trust in this place grow. Instead of searching for a fast solution and getting some fish elsewhere and having the risk of serving lower quality they decide to keep the place closed and keep standards high, even with the loss of income. That's a decision that calls for support and I will certainly return on a next occasion!

And as they say it.....Eat more fish!!!!!!!!!

Mussels in white wine sauce

Lovely mussels recipe and a typical Belgian/dutch way of serving them. Good quality seafood, some vegetables, seasoning and a splash of wine....that's all it takes!!
This is a dish for 2 persons, so about 1.5kg per head. We're big mussels eaters but you can count about 1kg. per person normally!

Estimated preparing time: 30 minutes

Ingredients: 
  • 3kg. of mussels
  • a big glass of dry white wine, +/- 20dl
  • 2 big onions, cut in rings
  • 3 celery stalks, chopped roughly
  • 2 carrots, chopped in thin rounds
  • 1/2 bush of flat parsley, chopped up
  • 2 chillis, chopped finely and deseeded
  • a pinch of dried chilli powder
  • salt and pepper
  • 6 spring onions, chopped roughly
  • handfull of cilantro, chopped finely   Keep this aside together with the spring onions

Prepare the mussels in 2 pots, so divide them in 1.5kg servings. Divide the greens and wine in 2 equal amounts.

heat up some olive oil in the pots and throw in the onions, carrots, celery, parsley and chillis.

Add the mussels, dried chilli powder and the white wine and turn up the heat. Put the lid on the pot and let this cook for 5-8 minutes, add the spring onions and cilantro and season with salt and pepper, shake well and serve!

Brodetto

Brodetto is a flavourfull and easy to make fish stew, the Italian answer to Bouillabaise. All you need is some good quality fish so go check out what your fishmonger is offering or scout the weekly/daily market for some yummy seafood. The ingredients that I used are not binding, just choose a firm white fish, some crustacean and some types of clams. See that you have a nice variation to prepare this dish!

Estimated preparing time: about 60-90 minutes, fishstock included


Ingredients:

  • 3Dl. of fishstock  -  you'll need the following to make about 1-1,5lt. of it
    • 1,5Lt. tabwater
    • +/-500Gr. of fish ( a cheaper but firm fish, for instance Red Gurnard)
    • some fish bones +/- 500Gr.
    • 1 celery stalk, chopped
    • 2 carrots, chopped
    • 1 leek, only the white part, chopped
    • 3 tomatoes, chopped
    •  some flat parsley leaves, a little handfull
  • 2 fresh squid
  • 300Gr. of mussels
  • 300Gr. of vongole
  • 4 gamba
  • 300Gr. of cod cheeks
  • 1 chillie, finely chopped
  • 2 cloves of garlic, finely chopped
  • a big drop of dry white wine
  • a handfull of flat parsley
  • Cayenne
  • Pepper and salt
  • Olive oil
Start by making the fish stock. Bring up 1,5lt. of water to a boil, add the vegetables, parsley, fishbones and fish. Season with pepper and salt and let it simmer for 20mins. 
Let all the ingredients cool down. Take out the chunks of fish and pass the liquid trough a sieve. Keep 3dl. of the stock aside for this recipe, after you're done with it  you can save it for later by putting it in the freezer. 

Clean the fresh squid. 
Take out the intestins and the 'bone' and cut in rings.  Heat up some olive oil and fry the squids shortly. 
Add the chillie, garlic and gamba and fry untill the shell of the gamba starts turning red.

Add the mussels, vongole and chopped parsley and pour in the white wine. Start adding the fishstock and make sure all is submerged, add some more stock if necessary. Throw in a pinch of cayenne and bring to a light boil for 10 minutes. Put in the cod cheeks and the rests of the Red Gurnard that you used for the stock and let these cook for 5 more minutes.

Divide the fish, clams and seafood into deep dishes and pour some sauce over it. Serve hot,  just like this or with a simple boiled potato or rice! The remaining sauce/stock can be recuperated for later!

Battered & fried plaice

Another easy dish prepared in little time. My kids managed to make this dish dissapear faster than I could prepare it!

Ingredients:

  • 2 plaice fillets, cleaned
  • 2 eggs
  • flower
  • breadcrumbs
  • pepper & salt
Cut up the plaice in bitesize chunks.
Prepare 3 deep dishes, 1 with flower(mix in some pepper & salt) in it, 1 with the breadcrumbs and 1 with the eggs(beaten). Make sure you've got enough in them.

Cover the plaice first with flower and beat off the excess flower, then with the eggs and finally with the crumbs.
Put in the fryer (Max or 190°) and fry untill golden brown, takes about 1-2 minutes.
Serve with tartare sauce, mayo or aïoli.

Spicy Thai mussels

You like mussels? You like Thai food? Then try this exotic version of our traditional 'Mussels a la marinière'. Quick and easy with a delicious result!!

Ingredients for 2 (or 4 as appetizer):

  • 2 kg. of mussels
  • 2 red chilli peppers
  • 2 stalks of lemongrass
  • +/ 1 tbsp. of grated peel of green lime 
  • 2 tbsp. of fishsauce
  • 2 tbsp. of green curry paste
  • 250ml coconut milk
  • handfull of chopped cilantro
  • handfull of basil (thai or normal)
  • 2 small roughly chopped shallots
Wash the mussels under streaming water untill clean. Let them rest in the water and change the water one time to clear out the remaining sand.
Chop the red chillies finely, cut each stalk of lemongrass in 3 or 4 pieces and crush them.


 Heat up some peanut or sunflower oil in a large pan and add the chillies, lemongrass and challots and let them feel the heat for a few minutes.













Then add the cleaned mussels and shake these around. Let them bake for a minute or so, add the coconut milk, grated lemon peel, curry paste and fish sauce. 

Bring to a boil and cover with a lid. Leave it under the lid for about 5 minutes or untill all mussels are open. Stirr wel and add the chopped cilantro and basil just before serving (tear the leaves apart by hand when you add them).
Serve hot and eat!!!
You'll have a tasty dish and a spicy broth. Just drink the broth or use it to mix with some cooked rice.
