Brasserie Georges - BXL





Dit restaurant in het mondaine Ukkel geldt al jaren als een absolute referentie in het Brusselse als het op de betere brasserie keuken aankomt. Een recente opname in de restaurantgroep SGB die ondermeer Le Paon Royal en Le Vieux Pannehuis beheert zal dit zeker versterken




Het eerste wat opvalt bij aankomst is het grote zeevruchtenbanket buiten. Een mooi gamma oesters, schaaldieren en ander lekkers uit de zee staat hier ter beschikking. Deze worden aangeboden per stuk of op samengestelde zeevruchtenschotels. Iets om eens uit te proberen bij een volgend bezoek.

Wij kiezen echter voor het meer klassiekere brasserie geweld uit het uitgebreide menu;



Op mijn bord verschijnen er 2 dikke garnaalkroketten, een stevige en krokante korst en een smeuïge vulling die een intense garnalensmaak heeft. Een van de betere garnaalkroketten die ik al heb mogen proeven. Schijfje citroen, wat gefrituurde peterselie.....zoals het hoort!

Naast mij wordt er een 'bokaal' vissoep geserveerd samen met krokante stukjes baguette en een rouille die stevig gelookt is maar ietwat pit mist. Dit geldt spijtig genoeg ook voor de soep. Een royale portie die lekker is van smaak maar wat meer kruiding had kunnen gebruiken, lees 'een flinke snuif cayennepeper'.

Niet getreurd, de hoofdschotel maakt dit meer dan goed.



Stukje vlees iemand? Hoewel, je zegt niet zomaar vlees tegen dit edel stukje dier. Een flinke côte a l'os Simmenthal is dit, mooi saignant gebakken en geserveerd met een béarnaise en bordelaise saus. Ah ja, en wat groentjes ook maar we houden onze focus op het vlees uiteraard dat boterzacht is en heerlijk smaakt. Ernaast verschijnt nog een kommetje in ossewit gebakken dikke frieten. Deze frieten zijn hier zowaar een specialiteit. Vooraf krijg je de vraag of ze dun of dik moeten gesneden worden en in wat je ze wil gefrituurd hebben; ossewit, olijfolie, ganzevet of paardenvet. De kwaliteit van de friet is onberispelijk, krokant van buiten en zacht van binnen. Lekker!















Naast mij ontfermt mijn echtgenote zich met verve over een choucroute royale, zuurkool met een selectie artisanale vleeswaren. De royale duidt hier dan op de portie want deze is weer ruim en wordt begeleidt door een flink geboterde aardappelpuree. De zuurkool is een tikkeltje aan de zoute kant maar smaakt goed en ook het garnituur vleeswaren kan bekoren.


Aan de overkant een klassieker, een duo van artisanale pensen met gevanileerde appeltjes en puree. Ik hoor geen gemor, integendeel.

Een dessertje lukt nog net en ik kies voor een crème brûlée en deze is lekker. Dit is een relatief simpel dessert maar veel restaurants slagen er maar niet in om dit te serveren zoals het hoort, een licht lauwe vanillecrème onder een warme, krokant gecarameliseerde(dus niet verbrand!!) korst. Ik casse la croûte, Amélie Poulain zou het niet beter kunnen, en een heerlijke licht lauwe vanillecrème openbaart zich voor mij. Heerlijk.


Bij het digestief kiest de grafisch ontwerper voor een Chartreuse verte en dit is zowaar een openbaring voor mij. De geur die mijn neusgaten binnen dringt wanneer dit drankje op tafel verschijnt is intens en doet mij van dit elixir houden nog voor ik het geproefd heb. Dat het mij helemaal weet te overtuigen na de eerste slok is een voorbode voor een plaatsje in de drankkast ten huize van ondergetekende.

Bij het ontvangen van de rekening krijgen we geen spontaan infarct en besluiten we om dit etablissement nog aan te doen als de kans zich voordoet. Let wel, ambiance is rumoerig maar heel levendig, inrichting is typische brasserie stijl (bezoek zeker het toilet, volledig in zwarte marmer), tafeltjes staan dicht opeen en van enige wijnkennis bij onze ober was niets te merken getuige het afwaswater dat we te drinken kregen. Het eten echter is van goede kwaliteit, geen culinaire hoogstandjes maar eerlijke gerechten op je bord.

AUB - SVP Lunch spot @BXL



Altijd op zoek zijnde naar leuke adresjes kwam ik via Be-gusto bij dit etablissement terecht, gelegen in hartje Brussel vlakbij de Munt schouwburg.
In de oude ingang van de 'Cinéma de la Monnaie' kan je genieten van een ontbijt, lunch of eens per week zelfs van een diner.
De ruimte op zich is eerder klein te noemen en voornamelijk gericht op kleinere groepen of snelle lunches en de inrichting is modern 'ruw' met geplaveide vloer en verschillende betonnen accenten. Mooi en origneel.

De kaart is onderverdeeld in 'Voor 12u.', 'Na 12u., 'Veggie' en 'Desserts' telkens met een 4-tal gerechtjes aan democratische prijzen maar wel met de beste ingredienten en geserveerd in originele bereidingen.

Wij genoten van een mooie combinatie van octopus/merinda tomaten/crème van rode paprika/zwarte olijf/amandel geserveerd met een broodje met groen peperbolletjes.
Dit gerecht werd normaal met makreel geserveerd maar we werden correct geïnformeerd dat deze niet vers genoeg meer was en aldus werd vervangen door octopus. Een waardige vervanger want dit smaakte echt top. Kort aangezette octopus met nog krokante tentakels, tomaatjes, een smeuige crème van zoete/rokerige paprika, getoaste hele amandelen gaven het geheel nog wat extra crunch en de lamsoor als afwerking bracht een mooie zout/zilte smaak mee. Op de rand van het bordje nog een broodje met groene peperkorrels. Normaal had dit een algenbroodje moeten zijn maar dit paste wel, gaf het nog wat extra pit.


We waren met 2 en dus nemen we natuurlijk de opportuniteit om verschillende gerechten te kunnen proeven. Ons ander gerechtje was een combinatie van kalfswangetjes/asperges/Geuze emulsie/parelgort risotto/kalfsfond.
De kalfswangetjes waren heel mooi krokant gebakken maar hadden nog hun mooi vlezige en 'vettige' structuur van binnen. De crunch van dit stukje vlees was heel aangenaam.
Ook de asperges waren mooi beetgaar en gebruind in boter en lagen op een rijke emulsie waarin ik de Geuze niet echt proefde en een laagje parelgort. Die parelgort was iets wat ik niet kende en is een soort tarwe en een ideale vervanger voor rijst, de smaak was er in ieder geval en het mondgevoel al zeker. De rijkheid van dit 'ensemble' werd nog geaccentueerd met een reductie van kalfsfond.


Als dessertje namen we een broodpudding van, opgepast lang woord, durumtarwezuurdesembrood 

en een Weense bol gevuld met frambozenjam en een citroen/citroengras crème. 


Beide goed uitgevoerd en lekker smakend maar ietwat aan de droge kant.

Er was ook oog voor de Brusselse 'terroir' met enkele bieren van de Brusselse brouwers van 'Brasserie de la Senne' waaronder deze verfrissend hoppige Taras Boulba.


En als alternatief op de alom bekende frisdranken kan je hier genieten van een heel lekkere huisgemaakte limonade met een fris zuur&zoete smaak met een mooi kaneelaccent.


Dit is zeker een mooi plekje en aanwinst in Brussel en weet zich geruggesteund door o.a. Kenny Bernaerts(Sea Grill) en onze eigenste buurtbakker Yves Guns met zijn originele artisanale broodcreaties.

Tijdens ons bezoekje waren we de enige in de zaal en dat was dan ook geen probleem voor het tweekoppige team van chef(Mathias Dircx)en serveerster maar hopelijk is dit niet al te dikwijls zo want deze resto verdient alleszins meer aandacht met zijn eerlijk concept en aanbod.

La Buvette - Bistronomy in Brussels


If you want to get a whiff of the actual bistronomy buzz then it's time for you to go to Brussels and give this resto a try.
It's located in Saint-Gilles, Brussels, on the busy Chaussée d'Alsemberg just in front of 'Café des spores', the renowned Brussels resto specializing in dishes with mushrooms of all kinds. This location is no coincidence as both resto's share the same owner, Nicolas Scheidt, a young entrepreneur with his roots in the French Alsace region.

Though he has a background in law school he never put it to use but opted to make a career out of his passion, good food.
After having  worked at  London's 'Bellamy' and 'Jamie Olliver's 15' he opened a bistro in the centre of the gastronomical capital,Paris, named 'L'office' and later took over 'Café des spores' and opened 'La buvette' here in Brussels.
It all adds to what you get now in 'La buvette'! A simple, laid back yet very original setting -an old butchershop- the pending meathooks are the remaining witnesses of the former use of the house together with the typical butchershop tiling,  and a culinary experience at high level for a 'bistro'-price!
And after a a couple of reviews by colleague good food lover/blogger Be-gusto we knew we had to give this place a go!

Service is without ceremony, friendly and easy, welcoming. A couple of young waiters take care of the service together with the chef's explaining the dishes with passion. The young waiters are somewhat unexperienced and clumsy but were allways correct when asked for info.
Fun thing is that we were actually seated in the cooling area where they used to hang and keep the meat.

There's only one set menu available, 7 dishes for 45€ with the option for cheese for 7€ and a slow coffee for 5€. Bistronomical prices!

They also have an impressive wine and beer menu, the collection of beers  they offer really left an impression on me and I opted for a beer as an apperitif, a 'Saison de Dottignies' from brewery 'De Ranke', a smooth unfiltered white/blond beer.







 Amongst the wines a couple of beautiful natural wines, we tasted a good fruity/mineral Riesling and a special Pinot noir from the same house, Rieffel, which tasted very candy like,  warped me back to my childhood.






No appetizer is served and the first dish came while we were still enjoying our drink. Different structures of kohlrabi with bergamot and a Cecina crumble. A preparation served cold, very refreshing and crisp with some smokey flavour from the Cecina crumble.

Next came a ravioli with a savoury black pudding sausage filling swimming in a delicious, strong yet balanced pork&chicken broth. Some braised spinach and toasted buckwheat on top.

This was followed by a dish that was so good that I forgot to take a picture of it :( Try to imagine it as I describe it....
A moist and flakey piece of pollock, a hearty reduced bisque as sauce and a potatoe cream with sepia ink. The fish was cooked perfectly, the rich flavour of the bisque elevated the fish and the potatoe cream with sepia ink harmonized the whole nicely. Texture wise the potatoe cream was a bit weird but taste was good.

Our fourth dish was probably the winner of the evening, a laquered piece of veal(shoulder I think) combined with a rutabaga cream and some rumex(zuring in Dutch) leaves. The veal had a sweet taste, so did the sauce, and was tender like butter - no knife needed- and countered perfectly with the earthiness of the rutabaga cream. Nice!
At this point we had an intermezzo with some cheese. A nice selection of  refined cheeses(from top, clockwise) 'St-Nectaire' 'Tomme de Chartreuses',  'Etivaz' and 'Fourme d'Ambert'. My personal favourite was the Fourme d'Ambert, a deliciously strong and salty blue cheese. One of France's oldest cheeses.

After the cheese we had our first dessert, a  combination of fresh 'Faiselle cheese ', mango, pumpkin, spiced meringue and caramel cream. Unfortunately this dish didn't work. I was expecting something refreshing, giving a nice tangy contrast but it lacked harmony. The different elements didn't blend well together leaving us dissapointed. I had a similar dish a week before at resto 'Veranda' in Berchem and there it was spot on so I knew what I was missing here! Too bad!
Luckily for us we weren't done yet and the next dish hit the sweet tooth in me! Chocolate heaven ;) A chocolate tart covered with a praliné demi-sel crackle and a chocolate/praliné quenelle. More of this please!!
Last dish ended on a refreshing note (as it should in my opinion), a lemon icecream covered with a light white chocolate sauce and a kardemon/cilantro syrup. I didn't really notice the cilantro and the lemon was a bit punched back by the white chocolate but it was a good refreshing ending.

And when you order a coffee here don't ask for an esspresso or latte-frape-machiato! You might end up banned from this place(so is asking for a coke apparently), they take their coffee seriously. You can choose from a couple of origin beans, all roasted in Belgium and then prepared following the 'slow coffee' principle. And I must say they make one hell of a coffee!
Very nice experience in this bistronomic resto in Brussels but I must say that my recent visit to 'Veranda' had left me a with better impression of what bistronomy is all about. Very good effort though and I wouldn't mind a second(or a third) visit!

Selecto - Brussels


Selecto - Bistronomique & comptoir; That is what it says on their menu and basically describes what you can expect in this restaurant/bistro, a mix of a low benchmark bistro combined with the culinary approach of a gastronomic restaurant. A duo formula where you choose 2 dishes will cost you 33€, the trio formula will set you back 39€ and that is a good price/quality ratio!

The menu offers you a nice choice of original interpretations of classic dishes like saltimbocca of suckling pig with Tiroler speck,fried polenta and eggplant gratin or a veloute of 'Puy' lentils with breaded mussels. All quality products.

I start with a tasty beer from the local Brussels brewery 'Brasserie de la senne', a Taras Boulba.
A fairly light, crisp blond/white beer with a fruity,hoppy taste. A nice way to start my lunch. I prefer having a good beer over champagne/cava as apéritif lately and certainly when it's a quality beer like this one.






As first course I had set my mind on the 'Puy' lentils but unfortunately they were sold out so they offered me a velouté of pumpkin with breaded mussels and a foam of what I suppose was a fish/shellfish reduction.
The foam was needless, didn't really contribute to the dish, both in taste and presentation but the velouté itself was rich, savoury and the plump, breaded mussels were tasty and gave the dice a nice bite to it.







My main was a nice piece of skinseared seabass on a crumble of butternut with Buffala mozzarella, Cévennes onions and cider butter sauce. The fish was prepared perfectly and the 'crumble' was savoury, the melted mozzarella added a nice 'cheesyness'.








Finished with an espresso and left satisfied.
